1 lb. Italian sausage
1 lb. Rigatoni noodles
5 garlic cloves, minced
1 Cup Heavy Cream
1 Cup White Wine
1 Cup Pasta Water
1 Cup grated parmesan
2 Cups spinach
2 Tbs, olive oil
Pinch of saffron
Pepper to taste
Red Pepper Flakes

Directions:
Directions:
*Boil water and start cooking the pasta
*Place a pinch of saffron in a small bowl of ice to allow the saffron to bloom
*Crumble and saute the Italian sausage in olive oil
*Add the minced garlic once the sausage is cooked and saute for 2-3 minutes
*Pour in the wine and simmer for 2-3 minutes
*Add the melted saffron ice cubes
*Add the heavy cream and bring to a simmer
*Add the pasta water
*Stip until well blended a partially reduced
*Add half of the parmesan cheese
*Combine cooked pasta and sauce
*Stir in the remaining parmesan cheese and spinach
* Serve and season with pepper and red pepper flakes as desired.
