2 egg yolks, room temp
1 T. dijon mustard
pinch salt
1 t. each lemon juice and ACV or 2 t. of one of these
1 cup butter, melted and cooled (2 sticks)

Put egg yolks in bottom of jar with mustard, salt and acid choice. Using immersion blender mix until mixture starts to thicken (takes only 1/2 a minute). Add about a tablespoon of butter and blend in until thick again. Add another tablespoon butter and repeat this until butter is mostly used up. At this point you can probably add more at a time until all the butter is incorporated.
Refrigerate.
