4 slices bacon
3 C raw spinach (or leaf lettuce)
3 T. flour
1 1/2 C. hot water
2 T. sugar
1 T. vinegar
3/4 tsp. salt
Dash of pepper
2 hard boiled eggs

Directions:
Directions:
Fry bacon until crisp. (reserve drippings) Crumble into spinach.

Add flour to drippings and blend thoroughly. Add hot water and cook over low heat until thick, stirring constantly. Add sugar, vinegar and seasonings. Stir well.

Pour mixture over spinach. Combine well until wilted. Garnish with sliced or diced hard boiled eggs.
