Personal Notes:
The name of chicken afritada brings back fuzzy memories of weekend afternoon’s spent in my lola’s kitchen. I remember helping her cook it for the first time, cutting onions and garlic in a mixture of tomato sauce, carrots, and potatoes. As I was helping her prepare the dish, she would tell me stories of the recipe being passed down from generation to generation and cooking it for the first time in the city of Siquiijo
