Ingredients: 1 ½ kbs. Chicken cut into serving pieces 2 Piece potato cubed 1 piece carrot sliced 8 0z. Tomato sauce 3 pieces hotdog sliced ½ cup green peas 3 pieces of bay leaves 1 piece red onion chopped 2 teaspoon garlic minced 3 cups chicken broth ½ teaspoon sugar 3 tablespoons cooking oil Salt and ground black pepper to taste

Directions:1. Heat the oil in a cooking pot. Salute onion and garlic until the onion softens 2. Add chicken, cook for 30 seconds, turn it over, and cook the other side for another 3. 3. seconds 4. Pour tomato sauce and chicken broth. Cover and let it boil 5. Add dried bay leaves cover the cooking pot and continue to cook at medium heat for 6. 30 minutes 7. Add hotdog and carrot. Cook for 3 minutes 8. Add potato cover the pot and let it cook for 8 minutes 9. Add green peas and cook for 2 minutes 10. Season with salt and ground black pepper |

Notes: The name of chicken afritada brings back fuzzy memories of weekend afternoon’s spent in my lola’s kitchen. I remember helping her cook it for the first time, cutting onions and garlic in a mixture of tomato sauce, carrots, and potatoes. As I was helping her prepare the dish, she would tell me stories of the recipe being passed down from generation to generation and cooking it for the first time in the city of Siquiijo
