Crust:
2 cups flour
4 T. powdered sugar
1 cup butter

Topping:
2 cups sugar
1/2 cup flour
1 cup coconut
4 beaten eggs
16 ounces maraschino cherries, drained and slivered. Save the liquid.

Frosting:

1 cup butter unsalted, room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
4 cups powdered sugar Sifted
3-4 tablespoon maraschino cherry juice, more or less depending on the consistency you want

Directions:
Crust: Mix like a pie crust and pat firmly into the bottom of a cookie sheet. Bake for 10 minutes at 350 degrees.
Topping: Mix and put on top of the crust. Bake for 25-30 minutes at 350 degrees. When cool, put on a powdered sugar frosting, with almond flavoring in it and using the juice of the maraschino cherries for the liquid.

Michele Stoltenberg, postmaster, always has a little open house at Christmas time. They have all kinds of goodies set up at the post office. I tried these the first year, and if I could, i'd take the whole dang plate. They are so good.
