Squash:
1 Medium Spaghetti Squash
2 Tbsp Water

Meat Layer:
2 Cloves Garlic, minced (or 1tsp)
1/2 Lb Ground Beef
1/2 Tsp Sea Salt
1/8 Tsp Pepper
1 Cup Marinara or pasta sauce
1 Tsp Italian Seasoning

Cheese Layer:
2/3 Cup Cottage Cheese
1/3 Cup Parmesan Cheese, grated
1 Tbsp Olive Oil
2/3 Cup Mozzarella Cheese, shredded

Cut squash in half. Place in a microwave safe dish shell up. Add water. Cover and cook for about 9-12 minutes or until it starts to shred easily with a fork. Let cool while preparing the meat.

In a medium frying pan over med-high heat cook beef and garlic until no longer pink. Add in salt, pepper and italian. Stir. Add in marinara. Stir.

In a large bowl mix together the cottage cheese, parmesan and 1 tbsp olive oil.

Shred the spaghetti squash with a fork to get strands. Add strands to the cottage cheese bowl and mix together. Stuff back into the squash shells. Top with the beef marinara mixture. Sprinkle mozza cheese on top.

Bake in 425º oven for 20-25 minutes or until hot and cheese is starting to brown.
