2 c chicken or vegetable stock
1 c dry quinoa
15 oz can chickpeas, drained and rinsed
1 English cucumber, chopped
½ small red onion, minced
½ c packed fresh parsley, finely chopped
½ c loosely packed fresh mint leaves, finely chopped
½ c roasted salted pistachios, chopped
1 c crumbled feta cheese, 4oz
1 c dried cherries
salt and pepper, to taste

For the Lemon Dressing:
½ c lemon juice, ~3-4 lemons
½ c extra virgin olive oil
1 tbsp honey (or to taste)
salt and pepper, to taste

For the Lemon Dressing:
Add ingredients to a jar with a tight-fitting lid and shake to combine.

For the Salad:
1. Cook quinoa in stock according to package directions.
2. Fluff cooked quinoa with a fork then scoop into a storage container or large mixing bowl to cool.
3. Cover and refrigerate until chilled.
4. Add chilled quinoa to a large mixing bowl then add remaining salad ingredients.
5. Drizzle with desired amount of dressing
6. Toss to combine and serve.
