2 each medium onions
2 each bell peppers
1 lb mushrooms, any type
1 Tbsp avocado oil
1 each large eggplant
3 cloves garlic
2 packets chili seasoning
1 lb beans, any type
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper, ground
2 cups tomato sauce
1 cup diced tomatoes

Directions:

1. In a large dutch oven or pot, sauté onions, peppers, and mushrooms in the oil until soft.
2. Add in other ingredients and simmer for 30 minutes to 2 hours*
3. Add salt and pepper to taste.

Cooking the chili longer will result in a thicker and more flavorful chili, but it still tastes great when cooked for less time!
