1 lb ground beef
4 large potatoes, peeled and cubed
1 onion, diced
2 cloves garlic, minced
4 cups beef broth
1 cup heavy cream
2 carrots, peeled and diced
2 stalks celery, diced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons all-purpose flour
2 tablespoons olive oil
1 cup shredded cheddar cheese for garnish
Fresh parsley, chopped for garnish
Directions:

In a large pot, heat olive oil over medium heat. Add ground beef, onion, and garlic, cooking until the beef is browned.
Stir in carrots and celery, cooking for an additional 5 minutes.
Sprinkle the flour over the mixture, stirring to coat the vegetables and beef, then pour in the beef broth.
Add potatoes, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
Stir in the heavy cream and heat through. Serve hot, garnished with shredded cheese and fresh parsley.
