1.5 lb acorn squash
1T EVOO
1T Maple Syrup
1/2 t smoked paprika
1/4 t salt

1. Preheat oven to 400º. Wash the squash well then dry. Carefully cut the acorn squash in half lengthwise from top to bottom. Scrape out the seeds. Slice the squash crosswise into 1/2 in wide slices.

2. Stir together the olive oil, maple syrup, smoked paprika & salt. Place the sliced squash in a bowl, then pour the maple syrup glaze over the top. Stir the squash until it is evenly coated.

3. Line a baking sheet with parchment paper. Arrange the seasoned squash slices on the sheet in a single layer. Use a rubber spatula to scrape all the remaining glaze out of the bowl and onto the squash slices.

4. Roast the squash slices for 30 minutes or until very tender. Season with a pinch of salt, then serve. The skin is easy to pull off now if you want to. I didn't like to eat the skin and didn't serve it with the skin on.
