4 large egg whites (at room temperature)
1 cup super fine sugar (we use caster sugar)
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
Green food coloring
Sprinkles

Preheat oven to 200˚F.

Add egg whites to a stand mixer with the whisk attachment and beat on medium speed for 2-3 minutes, until foamy. Add the cream of tartar and increase the speed to medium-high. Beat for an additional minute.

Start adding the sugar 1 tablespoon at a time. We waited about 20 seconds between additions. Beat until thick and glossy, and the meringue has formed stiff peaks. Add vanilla and beat for an additional minute or so.

Add a few drops of food coloring, and use a spatula to carefully fold the color in so the meringue doesn’t collapse

Line two sheet pans with parchment paper. Use a clean piping bag with the piping tip of your choice and pipe into Christmas tree shapes. Decorate each tree with a few sprinkles.

Bake for 2 hours on the middle rack.

Do not open the door while they are baking!

After 2 hours, turn off the oven and let them sit in the oven for at least two hours or up to overnight.

Store sealed in an airtight container in a cool, dry place (don’t refrigerate).
