Directions:1) Gather all ingredients. _ 2) Melt butter in a medium saucepan over low heat. Add the flour and whisk until smooth. 3) Add milk a little at a time, whisking well after each addition. Bring to a boil over medium-high heat and cook, stirring, until thickened. 4) Stir in beef and cayenne; cook until warmed through. 5) SERVE on Toast.
**This recipe can also be made with ¾ pound browned, drained hamburger meat.

Notes: Creamed Chipped Beef on Toast, S.O.S., Shit on the shingle, a classic American military dish that became popular with soldiers during World War II. The firsts recipe for Creamed Beef appeared in the 1910 Manual for Army Cooks. Through the years S.O.S. has been known as Save Our Souls, Same Old Ship, Something On a Shingle, but the name that as stuck is "Shit On the Shingle" and has been served to our soldiers in World War II, the Korean War and the Vietnam War.
When home from the War Soldiers would share with their families Mess Hall favorite recipes. I know that S.O.S. was a favorite meal with my Dad and after returning home, my Mom would make it at least once a month, and as I got older, he would talk about his time as a sailor and his memories of Creamed Chipped Beef on Toast, but it wasn't until I was a teenager that he shared the actual navy term of Creamed Chip Beef, "S.O.S". While growing up we'd go out on the lake and he would tell me stories about training in the Navy and that they would have to tread for long periods of time, so we would tread water together and just talk, I could've stayed in that lake forever with him, they were such special times. However, he would never actually talk about what his role was in the Navy during the War, stating it was classified.
When we got married and started having a family, I made "Creamed Hot Dogs on Toast", my kids loved it, and it was a quick lunch or dinner, when I would add a vegetable, normally string beans. It is said that any meat (the shit) can be used, and the shingle is just what you put it on, bread, mashed potatoes or maybe rice.
Like today however even though they shared this recipe, they were reluctant to actually talk about the war.
