3 cups all-purpose flour
¼ cup unsweetened cocoa powder
2 (¼ ounce) packages active dry yeast
1 Tbs caraway seed
1 Tbs salt
⅓ cup molasses
2 Tbs butter
1 Tbs sugar
3½ cups Rye flour
2 cups water

Directions:
Directions:
In a large bowl, combine all-purpose flour, salt, cocoa, yeast, and caraway seeds.

Heat and stir molasses, butter, sugar, 2 cups water, and 2 Tbs oil until warm (110-115 degrees).

Add to dry mixture and beat at low speed with electric mixer for 30 seconds. Beat at high speed for 3 additional minutes. Scraping bowl as necessary.

By hand stir in enough rye flour to make a soft dough and turn onto a lightly floured surface and knead until smooth, approximately 5 minutes.

Cover and let rest for 20 minutes.

Punch down dough and divide in half.

Shape into two (2) round or oval loaves and place on parchment paper lined sheet pan.

Brush with small amount of cooking oil and slash tops with sharp knife.

Cover and let rise until double in size (45-60 minutes)

Bake at 400 degrees for 25-30 minutes. (Bake to internal temperature of 200-205 degrees)

Remove from baking sheets, place on racks to cool
