4 1/2 C sugar
1/8 tsp salt
6 T butter
1 large can evaporated milk
2 tsp vanilla
12 oz semi-sweet chocolate bar
12 oz German’s sweet chocolate bar
2 (7 oz) jars marshmallow crème
2 C chopped pecans or walnuts

Prepare your pans. Line with parchment paper or tin foil and leave long enough strips to lift out of pans. Butter or spray liners. Much easier than trying to cut fudge in pans.

Bring first 4 ingredients to a boil in a large heavy saucepan over medium heat stirring constantly. Boil for 6 minutes. Remove from heat, add vanilla and pour syrup over chocolate and marshmallow cream in large bowl. Stir hard with wooden spoon until all is melted. Beat with rotary mixture for about 2-3 minutes. Stir in nuts and working quickly, pour immediately into buttered pans. Try to get it even on top because you can’t go back and spread it out.

Will make: 2 (8x8); 2 (9x9) or a 13 x 9 inch pan for thicker fudge. Chill for at least 3 hours before cutting into squares. Using a bench cutter makes a smoother cut.
