Meringue, Never Fail Recipe

2 T cold water
1 T cornstarch
1/2 C hot water
3-4 egg whites
3 T sugar
1/4 tsp baking powder
1 tsp vanilla

Mix together the cornstarch and cold water. Then add 1/2 cup HOT water and cook over medium heat until thickened, stirring constantly, 1 minute. (continue on next page)


Beat egg whites at medium speed until foamy. Gradually add 3 T sugar (1 T at a time) and 1/4 tsp baking powder. Beat until stiff peaks form. Add cooled cornstarch mixture and vanilla and beat until blended. Spread meringue over warm filling.

Bake at 425 degrees for 5-7 minutes.

My Aunt Vena gave me this recipe. She and Mother would sprinkle brown sugar on top of the meringue to make it glisten. This is a little trouble to make but it does stay on the pie without weeping.
