I lb. chicken breast, cut into 1" cubes
1 Tbsp. cornstarch, divided
1/2 tsp salt
1/2 tsp pepper
2 Tbsp chicken broth
2 Tbsp hoisin sauce
1 Tbsp. soy sauce
1 Tbsp oyster sauce
1/2 tsp Sriracha chili sauce
2 Tbsp sesame oil
1 medium red pepper, chopped
1 zucchini, chopped with seeds removed
1 cup mushrooms, chopped
2 garlic cloves, minced
1 tsp fresh ginger
1/2 cup dry roasted peanuts
1/4 cup fresh cilantro, chopped

Directions:

Combine chicken with 1 tsp cornstarch, salt, and pepper. set aside.

Place remaining 2 tsp cornstarch in a small bowl. Stir in the stock, hoisin, soy sauce, oyster sauce, and chili sauce until smooth.

In a skillet, cook chicken in batches in the oil until no longer pink. Keep warm.

Stir fry the vegetables in remaining amount of oil until tender crisp. Toss in chicken and sauce. Heat until warm through. Add peanuts.

Serve with cilantro sprinkled on top. Serve with warm rice.
