2 cups cherry tomatoes, halved
3 tablespoons olive oil
3 cloves garlic, sliced
¼ teaspoon sea salt
1 tablespoon oregano, fresh
8 ounces mozzarella or burrata
2 tablespoons basil fresh, sliced
⅛ cup balsamic glaze
crostini or sliced veggies for dipping or serving

Directions:
Directions:
Preheat oven to 350°F. In a small baking dish combine tomatoes, olive oil, garlic and oregano. Roast 25 minutes. In a small serving dish or platter, place mozzarella in the middle. Surround with tomato confit and garnish with basil and balsamic glaze. Serve with crostini.
