30 medium-large tomatoes (peeled and quartered)
3 onions (quartered)
4 green bell peppers (quartered)
1/2 c sugar
1 tbs brown sugar
2 tbs olive oil
2 tsp soy sauce
1 c vinegar
6 tbs Italian seasoning
4 tbs oregano
2 tbs salt
2 tbs minced garlic
1 tbs onion powder
1 tbs garlic powder
1/2 tbs pepper

Optional: 8 oz chopped mushrooms

Directions:
Directions:
1. In small batches in a blender or food processor, blend up the tomatoes, onions, green bell pepper, and garlic to desired chunkiness. Drain off some of the excess liquid.
2. Mix together all ingredients in a large pot and bring to a boil.
3. Reduce heat to low and simmer for 1-2 hours stirring occasionally.

Next time: strain off some juice before cooking, a little less Italian seasoning, a little more garlic and sugar, leave mushrooms in bigger chunks
