MARINADE:
1 tsp salt
1 1/2 tsp paprika
1 tsp garlic powder
1/2 tsp pepper
1/2 tsp dried minced garlic
1/2 tsp cayenne pepper (optional)
1/2 tsp oregano
1/4 tsp red pepper flakes
1 tsp lemon juice
Tbsp or enough oil to make a paste
REST OF DISH:
2 Tbsp olive oil
1 pk andouille sausage- sliced 1/4"
4 bone in skin on chickken thighs
1 yellow onion-diced
1 green bell pepper-diced
2 celery stalks-diced
1/4 tsp cayenne pepper
pinch red pepper flakes
salt and pepper to taste
1 cup dry long grain rice
2 1/4 chicken stock
To serve:
Chopped green onion and parsley

Mix all marinade ingredients into a bowl. Add chicken thighs, turn to coat, and set aside. Preheat oven to 350. Add drizzle of oil to cast oil or oven large oven proof skillet. Heat to med high. Brown sausage then transfer to a plate. Add chicken thighs, skin side down, and sear for 2-3 minutes per side to develop a crispy skin. Transfer chicken to plate with sausage, it will finish cooking later in the oven. Leave pan drippings but if
there are black bits in the pan remove them with a paper towel. Lower heat too med low and add onions, celery, and bell pepper. Cook 2-3 mins til soft. Add seasonings and stir. Mix in rice. Add chicken stock, stir, and let simmer for 1 minute. Nestle chicken thighs and sausage on top of rice (pour plate juiced in also). Return to a simmer and cover with lid or foil. Add to oven and bake for 35 mins. Remove cover and bake another 10-15 mins until liquid is absorbed into the rice. Garnish with green onion and parsley and serve!
