4 red potatos (any potato will do.)
1 onion, chopped
3 Tbsp. olive oil, divided
1 green pepper seeded and chopped
1 tsp. salt
1/4 tsp. black pepper

Directions:
Directions:
1. Bring a large pot of salted water to a boil. Add potatos and cook until tender, but still firm, about 15 minutes. Drain and cool, and cut into 1/2 inch cubes.
2. Heat one Tbsp. of oil over a medium heat in a 9 inch cast irom skillet. Add onion and green pepper. Cook, stirring often, until soft, about 5 minutes. Transfer to a plate and set aside.
3. Pour the remaining 2 Tbsp. of oil into the skillet over medium - high heat. Add potato cubes, salt and black pepper. Cook, stirring occasionally, until potatos are browned; about 10 minutes.
4. Stir in onion- green pepper, mix. Cook for about a minute.
Serve hot.
