Salted Caramel Sauce Recipe

Ingredients: 1 cup granulated sugar ⅓ cup water 5 tbsp unsalted butter, cut into 1 tbsp chunks 1 cup heavy cream 1 tsp pure vanilla extract 1 tsp salt

Directions:Put the sugar and water into a medium saucepan, whisk gently to mix.
Heat over medium heat until the sugar dissolves. Mixture will turn clear within a couple of minutes.
Increase heat to medium high and boil until sugar begins to change color -- anywhere from 5-8 minutes. Watch until sugar changes to the desired shade of amber. Remove from heat immediately.
Slowly add the butter and cream, a tbsp of each at a time, stirring with a wooden spoon. Don't worry when it bubbles and spits at you. Continue until all butter and cream are added and the caramel is smooth. Pour in the vanilla extract and sprinkle in the salt. Stir again and let cool to room temperature.
Pour into an airtight container and store in the fridge. |

Notes: Caramel is notorious for being finicky and having a mind of its own. This recipe worked perfectly and created a beautiful smooth and divine caramel. Patience is key when waiting for the sugar to change color -- mine definitely took longer than 8 minutes. Also, don't fear when the caramel bubbles and spits at you as you add the butter and cream. Just keep stirring and it will incoroporate. So worth the effort!
