Lemon Chicken with Asparagus Recipe

1 lb. boneless, skinless chicken breasts
1/4 C flour
1/2 salt
1/2 t pepper
1-2 T butter
1 T olive oil
1t lemon pepper seasoning
1-2 C chopped asparagus
2 lemons sliced
2 T honey
parsley for garnish
Directions:
Directions:
1. Cover chicken breast with plastic wrap and pound each piece to about 3/4" thick. Note, if your breasts are very thick, you can slice in half horizontally with a knife rather than pound. Much easier!!
2. Place flour, salt and pepper in shallow dish and dredge each chicken breast in to coat.
3. Melt 1T butter and olive oil in large skillet over medium heat. Add chicken and sauté for a few minutes on each till golden brown. While cooking, sprinkle each side with lemon/pepper seasoning. When chicken is browned, transfer to a plate.
4. Add chopped asparagus to pan and sauté for a few minutes until its bright green color, tender and crisp. Remove from pan and set aside.
5. Add sliced lemons to bottom of pan and cook for 2-3 minutes. Add remining T of butter to pan to help caramelize lemon slices. Remove slices.
6. Add all ingredients back to pan and warm again 2-3 minutes.
7. Garnish with parsley. (or not??)

1. I like to add 1-2T of lemon curd to finish as my wife and I LOVE a strong lemon flavor.

2. I generally serve this over spaghetti noodles.

3. When I drain my spaghetti, I add about 1T of garlic salt and mix to season.
