12 oz. cooked chicken sausage, sliced
1 lb baby potatoes
2 bell peppers, sliced
1 large onion, sliced
2 cloves garlic, finely chopped
2 TBSP olive oil
1 TBSP Italian seasoning
1 tsp salt
½ tsp black pepper

Directions:
Directions:
Preheat oven to 400º. Line a large sheet pan with parchment paper. In a large bowl, toss all ingredients thoroughly coating the sausage and vegetables. Spread onto the prepared pan. Roast, stirring once halfway through cooking, until the potatoes are lightly browned, 30 to 35 minutes.

I made this recipe when Grandma was here visiting in the spring of 2024 and Amelia was home after her second year of law school before we took her to NYC for the summer! We had a blast in NYC exploring Time Square and seeing the musical SIX.
