1lb Bowtie Pasta
1 ½C Shredded Parmesan Cheese
2T Olive Oil
12 oz marinated quartered artichoke hearts, drained and halved
2 cups Heavy Cream
8 oz block cream cheese, cut into pieces
8.5 oz oil packed sun dried tomatoes, drained and chopped
5 oz baby spinach (or baby kale)

Directions:

1. Cook pasta until al dente, drain and return to pot.
2. In a large skillet, heat olive oil, stir in garlic. Add cream and cream cheese stirring often until melted. Add Parmesan cheese and stir until well blended. Gently stir in artichoke and sun dried tomatoes. Add spinach and stir until cooked.
3. Pour sauce over pasta and toss gently.
