2 c water
1 c quick oats
3 Tbsp butter
1 Tbsp active dry yeast
⅓ c warm water (110º-115º)
⅓ c packed brown sugar
2 Tbsp sugar
1½ tsp salt
4¾ to 5¼ c all purpose flour

Directions:
In a saucepan, bring 2 cups of water to a boil. Add oats and butter. Cook and stir for 1 minute. Remove from heat and cool to lukewarm. In a mixing bowl, dissolve yeast in warm water. Add the oat mixture, sugars, salt, and 4 cups of flour. Mix with bread hook and let knead for 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in warm place til doubled in size, about an hour. Punch dough down and allow to rest about 10 minutes. Shape into 18 balls and place in two round baking pans. Cover with a clean towel and let rise until doubled, about 45 minutes. Bake at 350º for 20-25 minutes or until golden brown. Remove from pans to wire rack and spread melted butter over the top.

This has become the 'asked for' whenever we're together with Megan's family. It's easy to make and are really good. I also put them in a 9x13 cake pan as well. The rolls can be adjusted to be smaller if you want to make more of them.
