1 lb. beef round steak, 1/2 " thick (I have also used stew beef)
2 T. olive oil
1 c. water
1 bay leaf
1 tsp. salt
1/4 tsp. crushed red pepper
1 can (16 oz.) red kidney beans, drained
1 cup uncooked regular rice
2 med. green peppers cut into 1" pieces
1 medium onion, chopped
1/2 tsp. curry powder
1/4 tsp. black pepper

Cut beef into 1" pieces. Heat oil in skillet until hot. Cook & stir beef over medium heat until brown. Add water, bay leaf, salt & red pepper.Heat to boiling. Reduce heat, cover & simmer 45 minutes.

Drain beef, reserving liquid. Add enough water to broth to measure 2 cups. Mix beef, broth & remaining ingredients. Pour into 2 qt. casserole dish that has been lightly greased. Cover and cook in 350 degree oven until liquid is absorbed-approx. 45 minutes.

It was 1991 and all of us were at a New Year's Eve party at our house in Bernardston. We decided for food to do an international theme. We drew names-I got Africa! This casserole was so good that I made it several times afterwards.
