4-6 Catfish fillets or whole catfish
1 C Cold Buttermilk
1 C Yellow Corn meal
1 teaspoon Flour
1 teaspoon Salt
1 teaspoon Creole Seasoning
1 tsp Pepper, Garlic Salt and Onion salt
Enough Canola oil to deep fry

Directions:

1. Rinse catfish and pat dry. Place in buttermilk and refrigerate uncovered for at least 1 hour.

2. Heat oil to 350º

3. Remove catfish from buttermilk shaking off excess.

4. In a shallow dish add cornmeal, flour and seasonings. Dredge each piece of catfish thru mixture and shake off ALL excess coating.

5. Deep fry for 7-10 minutes until lightly browned and catfish is flaky inside, flipping once. Serve with a splash of fresh lemon juice
