1 pound dry navy beans
8 cups water
1 1/2 pounds meaty smoked ham hocks
2 medium potatoes, peeled and cubed
2 medium carrots, chopped
2 stalks of celery, sliced
1 medium onion, chopped
3/4 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon pepper

Directions:
1. Rinse beans. in a soup pot combine beans and water. Bring to boil and then reduce heat to simmer for 2 minutes. Remove from heat. Cover and let stand for 1 hour.
2. Bring beans and liquid to boiling. Add smoked ham hocks. Reduce heat, cover and simmer for one hour.
3. Remove ham hocks. When they are cool enough to handle, cut off meat and coarsely chop. Discard bones. Return meat to pan. Add potatoes, carrots, celery, onion, thyme, salt and pepper. Cover and simmer 45 minutes - vegetables and beans should be tender.

Serve with warm cornbread!
