Made some of our traditional Polish Sausage for the Holiday.. This is a fresh sausage and is not smoked.
Rick's Traditional Polish White Sausage {Biała Kiełbasa}

Recipe is for 5 lbs ground Pork Butt:
⦁ 2 tbs plus 1 tsp Kosher salt
⦁ 2 tsp sugar
⦁ 1 tbs plus 2 tsp course ground black pepper
⦁ 2 1/2 tsp marjoram
⦁ 9 medium cloves of garlic crushed. (we like it garlicky)
⦁ 2/3 cup ice cold water

Preparation:
Course grind 5 lbs Boston Butt
Keep the pork cold or partially frozen before grinding.
Add all the seasonings to the ground pork and mix thoroughly by hand to a sticky paste. Stuff into 35-38mm casings

It's a fresh sausage un-cured and not smoked. Simmered in a little water to temp.


1/4 inch grind or 6 mm
