700g (1 lb 9 oz) potatoes
1 litre (1½ pints) boiling stock
(meat or vegetable)
2 tbsp vegetable oil
Paprika to taste

1. Pre-heat the oven the oven too 220C/425F/Gas Mark 7.
2. Cut the potatoes into thick chips. Plunge into a pan containing the boiling stock and cook up to 5 minutes, until just tender.
3. Drain in a colander (reserving the stock for another batch of chips to use in a soup or sauce). Allow to cool slightly.
4. Put the oil in a large polythene food bag or plastic food box and carefully toss the chips into the fat. (At this point you can freeze them for later use, once they are cold.)
5. Transfer the chips to a lightly greased or non-stick baking tray and bake for 10-15 minutes, turning them once or twice, until golden and crisp. If cooking from frozen to 15-20 minutes. Sprinkle with paprika rather than salt, and serve
