1 lb sliced bacon
1 small onion, chopped
9 large eggs, lightly beaten
4 cups frozen shredded hash brown potatoes, thawed
2 cups shredded Cheddar cheese
1 1/2 cups small-curd cottage cheese
1 1/4 cups shredded Swiss cheese

Directions:

Preheat oven to 350º. Spray a 9x13-inch baking dish with cooking spray.

Cook bacon in skillet until evenly browned; drain and then chop up. In same skillet, brown onion until translucent.

Transfer bacon and onion into large bowl. Stir in eggs, potatoes, Cheddar cheese, cottage cheese and Swiss cheese. Pour mixture into prepared baking dish.

Bake in preheated oven until eggs are set and cheese is melted, about 45-50 minutes. Let stand 10 minutes before cutting and serving.
