3 cups hash browns, fried
1/2 lb sausage, fried
1/2 lb bacon, fried
1 cup grated cheese
8 eggs, scrambled with salt and pepper, onions and green peppers

Cheese sauce:
2 tbsp butter
2 tbsp flour
1 cup milk
Salt to taste
1/4 cup velveeta cheese or cheese of your choice

Directions:

Layer in order given in a greased, 2 quart casserole dish. For the cheese sauce: melt butter. Stir in flour. Add milk and cook till thick. Add cheese and stir till smooth. Pour over casserole. Bake at 350º for 15-20 minutes or until hot and bubbly. Yum! One of those breakfast casseroles that everyone likes!

This recipe is easy to adjust all ingredients, more or less as you like or need. It freezes well but takes a long time to thaw. If it’s been frozen it takes longer than 20 minutes to heat. If you double the recipe for a 9x13 it will also take longer to heat.
