2 T. melted shortening
1 egg
1 c. sugar
1/2 t. salt
Grated rind of one orange
2 c. flour
1/2 t. baking powder
1/2 t. baking soda
juice of one orange, with water added to make 3/4 c. liquid
1/2 c. pecans
1 c. Ocean Spray fresh or frozen cranberries (chopped)

Directions:

Melt shortening and set aside. Beat egg. Add sugar, salt, shortening, and grated rind and mix well. In separate bowl, sift together flour, baking powder and baking soda. Alternating, add flour mixture and orange juice liquid to egg mixture, beating until batter is smooth. Add cranberries and nuts; mix thoroughly with batter. Pour batter into small greased loaf pans. Bake approimately 60 minutes at 350º
