1.5 lbs russet potatoes (about 3)
1 Tbsp and 1tsp salt
1 onion
2 carrots
2 Tbsp olive oil
1 1/2 lean ground beef
1/4 tsp garlic powder
1 Tbsp Worcestershire sauce
1 tsp dried thyme
1 Tbsp tomato paste
3 Tbsp flour
1 1/2 cups beef broth
1/2 cup frozen peas
1/3 cup milk
3 Tbsp butter

Directions:
Preheat oven to 450 degrees. Peel potatoes: Cut into 1 inch pieces. Add to a large pot. Cover potatoes with cool water and add 1 Tbsp salt. Bring to a boil over high heat, then reduce heat to medium. Cook potatoes until tender, 20 minutes. Drain in a colander. Continue to prepare filling while you want.
Dice onion: Cut in half, trim away ends, and peel. Cut layers into strips, then squares. Add to medium bowl. Cut away ends of carrots. Chop into small pieces. Add to onions.
Heat oil in pan over medium high heat. Add carrots and onions. Cook until softened, 6-8 minutes. Add beef, 1 tsp salt, garlic powder, Worcestershire, thyme, and tomato paste. Break beef into small pieces. Cook until browned, 7-9 minutes. Add flour, beef broth, and peas. Bring to boil. Cook until thickened, about 2 minutes. Add filling to baking pan. Add potatoes, milk and butter to large bowl. Mash until smooth. Spread potatoes evenly on top of filling with a rubber spatula. Bake until potatoes are browned and filling is bubbling, about 15 minutes.
