1 ½ c. Bisquick
½ c. sugar
1 egg
2 T shortening
1 t. vanilla
½ cups apricot jam

Directions:
Directions:
Blend all ingredients, except jam. Beat 4 min. Pour batter into greased & floured square cake pan.
Bake at 30 min. at 350º
While warm spread with jam.

Option: Coconut cake: same recipe but add ½ cup water or milk and coconut to batter.
