2 hard-cooked egg yolks, sieved
2 cloves crushed garlic
1 1/2 T dark mustard
1 1/2 Cups Mayonnaise (not salad dressing)
1 T. Worcestershire
1 T. Paprika
1 1/2 T. horseradish
Dash Tabasco
2 T. vinegar
1/4 c. finely chopped parsley
Salt and pepper to taste

Directions:

Combine all ingredients, mix well. Store in jar and keep in refrigerator, approximately 12 hours.
Minced green onion, additional horseradish and mustard may be added. May be thinned with a little vinegar.
Makes one pint.

Shrimp remoulade: marinate shrimp in sauce several hours before serving. May
