4 tbs butter
1 1/2 lbs chicken (cut into 1” pieces)
1 lb asparagus (cut into 1” pieces and steamed)
1/2 c onion (chopped)
8 oz mushrooms (sliced)
1/2 c chicken broth
3/4 c heavy cream
1/2 tsp salt
1/2 tsp pepper
1/2 tsp thyme
1/4 c mayo
1 tbs Dijon mustard
1 tbs lemon juice
1 1/2 c Gouda (shredded- reserve 1/4 c for topping)
1/2 c Parmesan cheese (reserve 1/4 c for topping)

Directions:
Directions:
1. Preheat oven to 375 degrees.
2. Cook chicken using preferred method.
3. Place chicken in greased casserole dish and top with steam asparagus.
4. Add onions and mushrooms to a skillet and sauté in butter. Reduce heat to medium and add chicken broth, cream, salt, pepper, thyme, mustard, mayo, and lemon juice. Bring to a simmer. Cook until sauce is reduced (stirring frequently) for about 8-10 minutes.
5. Pour over chicken and asparagus. Mix in cheese. Top with remaining cheese and bake for 30 minutes.
