6g Table Salt
390g Bread Flour
7g Instant Rise Yeast
25g Table Sugar
76g Sweetened Condensed Milk

1 Whole Egg, Large - room temperature (70º f)
240g Milk (100º f)

57g Butter - room temperature (70º f)


Egg Wash Recipe
Beat 1 egg and 1 Tbs water until smooth and runny.

Condensed Milk Glaze Recipe
Mix 42g of Melted Butter and 57g of Sweetened Condensed Milk (or 3 tbs of each) until smooth and runny.

Loaf slasher (sharp knife or razor)

Electric Mixer with a Dough Hook
One 2lbs Loaf Pan

Get your eggs up to room temperature (70º f). You can leave them out on the counter overnight or place them in a large bowl with hot water from the tap for approximately 15-minutes.

Put your milk in the microwave and heat it to 100º f

Place the Salt, Flour, Yeast, Sugar, Sweetened Condensed Milk, Eggs, and Milk into the mixing bowl in this order.

Run the mixer (with the kneading hook) at medium-low speed (faster is not better)for 15 to 20 minutes or until the dough becomes smooth and pulls cleanly away from the bottom of the bowl.

While the mixer kneads the dough, slowly add the butter one pat at a time. Wait until the pat of butter is mixed into the dough before adding the next pat. Continue to knead the dough until it stops looking oily.

Dump the dough onto the counter and form it into a Boule (round ball) by tucking the edges under itself.

Lightly oil the inside of the mixing bowl and the top of the boule.

Place the boule back into the mixing bowl.

Cover the bowl with cling wrap, and let the dough rise for 1-hour or until doubled in size. The temperature of your kitchen affects the rise time, so the size of the rise is more critical than the amount of time you let it rise.

Liberally grease the inside of the loaf pan with non-stick spray. You can substitute the non-stick spray with butter or oil.

Roll the dough out to about a ½-inch deep and a width about 2-inches shorter than the loaf pan's length. Then tightly roll the dough into a loaf.

Divide the rolled loaf in half, cut the halves in half, and divide the sections in half. You should end up with eight equal sections.

Take the cut sections and lay them on their side in the loaf pan, so the cut edges touch. It should look like you cut the rolled loaf into 8 pieces and tried to stick it back together.

Lightly cover the loaf with cling wrap, and let the dough rise for 1-hour or until doubled in size. The loaf will be a little over 2-inches higher than the lip of the loaf pan.

While the loaf is rising, set a timer for 30-minutes and make the egg wash. When the timer goes off, make sure your rack is in the middle of the oven and start preheating your oven to 375º f.

After the loaf has doubled in size, paint the surface of the risen loaf with egg wash.

Place the loaf in the middle of the preheated oven (375º), and bake for 30-minutes.

Remove the loaf from the oven and turn it out on the cooling rack.

Then paint the top of the loaf with the condensed milk glaze.

Let the loaf cool for at least 30-minutes before cutting.

This is a wonderful lightly sweet bread that is perfect for breakfast. It can easily be used to make Pan Dulce or Sweet Rolls. Maybe even French toast.
