1 c oats
3 T roasted cashew, lightly chopped
3 T dried cranberries. Increase to 4 T
1/2 t ginger
1/4 t salt
1/2 c peanut butter
1/4 c honey

Optional: 1/4 c mini chocolate chips, chopped almonds, raisins, pumpkin seeds, flaxseeds, protein powder.

Directions:

Combine oats, cashews, cranberries, ginger and salt. Stir to mix.
Add peanut butter and honey. Mix well to thoroughly combine. Cover and refrigerate for 20-30 minutes until mixture is easy to handle. Shape into balls. Store, lightly cover in refrigerator up to 3 days. Can be frozen for up to 1 month.
