Beef, Bean and Cheese Burritos Recipe

Ingredients: 1lb 80% Ground Beef 16oz can refried beans 1 packet taco seasoning mix 6c Shredded Cheddar Cheese or Mexican Blend Small (but not fajita) Size Flour Tortillas 28oz can Old El Paso Green Chile
Toppings: Sour Cream Guacamole

Directions:Preheat oven to 375º
Cook the ground beef over medium high heat till cooked through
Add the refried beans to the cooked ground beef and mix in well
Add the taco seasoning to the ground beef mixture and stir to combine
Add 3c shredded cheese and stir in to melt
Remove from heat
Spray 2 8X8 disposable pans
Spread 1/4 of the green chile in the bottom of each pan
Divide meat mixture between 8 tortillas and roll up, place 4 rolled burritos in each pan
Top each pan with 1/4 of the green chile and the remaining shredded cheese
Cover with non-stick foil and bake for 20 minutes or until heated through
Service with sour cream, guacamole, tortilla chips... |

Notes: This recipe was created on a whim and the burritos that didn't fit in the pan were placed in a ziploc bag and into the fridge they went. Sam and Doug discovered them the next day and enjoyed them cold as an afternoon snack and couldn't decide whether they liked them better cooked in the green chile or as a snack.
I like to bake one pan and put the other into the freezer for a lazy day when something comforting sounds good. I include thawing/baking instructions and use them as a get well meal for family and neighbors.
