1 1/4 c flour
1 c granulated sugar
1 tsp ground cinnamon
1/2 tsp ground allspice
2/3 c vegetable oil
2 large eggs, lightly beaten
2 c finely grated carrots
1/2 c chopped pecans

Creamy White Frosting
1/4 c (1/2 stick) butter, softened
1/2 tsp vanilla extract
1/2 tsp almond extract
1-2 T milk or heavy cream
2 c sifted powdered sugar

Preheat oven to 350º. Coat 8x8x2 in pan with cooking spray or butter. In medium mixing bowl combine flour, sugar, and spices. Make a well in the center; set aside. In 2 cup glass measure cup combine oil and eggs. Stir egg mixture into flour mixture until smooth. Add in carrots and pecans. Pour batter into prepared pan. Bake at 350º for 35-40 minutes until a toothpick inserted in center comes out clean. Cool completely. Frost.

Creamy Frosting
In mixing bowl beat butter until smooth. Add vanilla and almond extract, beating to combine. Add powdered sugar slowly beating continuously until smooth. Add enough milk or cream to create a spreading consistency.
