Fudgy Chocolate Layer Cake Recipe

Cake:
1 3/4 c flour
1 c less 1 T cocoa
1 1/4 tsp baking soda
1/8 tsp salt
3/4 c butter - softened
2/3 c sugar
2/3 c brown sugar
2 large eggs
2 tsp vanilla
1 1/2 c buttermilk


Frosting:
1/2 c butter - softened
1 c confectioner's sugar
3-oz unsweetened chocolate - melted
2 tsp vanilla

Cake:
Mix together flour, cocoa, baking soda, and salt in a small bowl. Set aside.

Beat butter, sugar, and brown sugar until fluffy.

Add eggs one at a time and beat well each time.

Add vanilla and mix.

Add buttermilk and flour mixture alternately.

Line bottoms of 2 9" round pans with wax paper. Grease sides of pans and paper. Dust with flour.

Bake 25-30 minutes. Transfer to wire racks. Remove paper and turn layers top side up and cool completely.


Frosting:
Beat butter and confectioner's sugar until light and fluffy.

Add unsweetened chocolate and vanilla and continue beating until shiny and smooth.

Frost cake and then let stand for 30 minutes before sprinkling with chocolate shavings (if desired).
