Ingredients: CAKES
GROUP 1 ¼ cup canola oil ¼ cup sugar 2 TBS buttermilk 1 egg white 1 tsp red food coloring ¼ tsp vanilla ⅛ tsp white vinegar
GROUP 2 ⅓ cup + 1 TBS flour 2 tsp cocoa powder ⅛ tsp baking soda ⅛ tsp salt
DECORATION Chocolate sprinkles OR chocolate chips, dark
Tools 2 bowls, medium-sized electric mixer mini-bundt pans, 3-4, well greased (make sure that the butter is evenly spread of the flowers won't turn out well-shaped) cake tester (i.e., wooden toothpicks) wire rack

Directions:Preheat the oven to 350º.
In bowl, beat together Group 1 using electric mixer.
In another bowl, whisk together Group 2.
Slowly add the dry ingredients to the wet ingredients, while mixing.
Divide the batter between the pans.
Bake for 20-22 minutes until a cake tester comes out clean. Let cool completely on a wire rack.
Add chocolate sprinkles or chips to the center of each cake. |

REMEMBRANCE DAY
Remembrance Day is a holiday in the United Kingdom that commemorates Armistice. Armistice was the treaty at the end of WWI. This treaty called for a cease of arms (battle). It occurred on November 11, at 11 a.m. The year was 1918. 11/11 at 11:00 a.m. is the official time of remembrance in Great Britain for remembrance of veterans. Remembrance Day, as it is now called, honors all those who have served their country. There is a hope that one day there will be no more wars. Poppies are a very important national symbol during this time. Many poppies are sold to sponsor veterans during the holiday.
MEMORIAL DAY
Memorial Day is our U.S. holiday that takes place on the last Monday in May. (Prior to 1968, it was always celebrated on May 30th.) Memorial Day specifically honors men and women who have died in the line of service. However, over the years, it has extended to all who have served their country in the armed forces. The American flag is raised momentarily at dawn on Memorial Day. The flag is then lowered to half-staff. This is to commemorate those who have lost their lives serving their country. At noon, the flag is raised to announce the resolve to "rise up" and honor those who have fallen. There is hope that we will one day pursue freedom and justice for all.
Poppies are sometimes used in the U.S. to honor those who have died in acts of service for the country, though it is not nearly as widespread a practice as in the U.K. (United Kingdom). The color red, though, is universally seen as a color to honor those who have died in war. Red poppies symbolized the loss of life and tragedy of war in John McCrae’s famous poem, “In Flanders Fields.”
