Cake:
2 c flour
2 tsp cinnamon
1 tsp baking powder
1/4 tsp salt
2/3 c butter - softened
1 c sugar
3 large eggs
2/3 c milk
3 medium carrots - grated
1/2 c coarsely chopped walnuts


Icing:
1/2 c butter - softened
4-oz cream cheese - softened
1 tsp vanilla
2 1/2 c confectioner's sugar

Topping:
1/4 c finely chopped nuts
2 T brown sugar

Directions:
Directions:
For Cake:
Mix together flour, cinnamon, baking powder, and salt and set aside.

Cream butter and sugar until light and fluffy.

Add eggs one at a time, beating well.

Add milk alternately with flour.

Stir in grated carrots and walnuts.

Pour into greased and floured 9" round pan.

Bake 350º for 40 minutes.

Turn cake out after 10 minutes.


For Icing:
Beat butter, cream cheese, vanilla, and confectioner's sugar until completely smooth.

Frost cake after it is completely cool.


For Topping:
Mix walnuts and brown sugar together and sprinkle over iced cake.
