3 Tbs oil
1/2 cup firmly packed brown sugar
1 4-ounce jar strained applesauce (baby food)
1 tsp vanilla extract
2 cups quick cooking oats
1/2 cup raisins
1 Tbs chopped walnuts
1/2 tsp baking powder
1 tsp ground cinnamon

Preheat oven to 325 degrees.

Lightly grease an 8-inch square baking pan with nonstick cooking spray.

In a bowl combine oil, brown sugar, applesauce, and vanilla until blended. Add oats, raisins, walnuts, baking powder, and cinnamon. Mix well until blended. Press mixture firmly and evenly into prepared pan.

Bake until edges are golden brown, around 25 minutes. Cut into 16 squares while hot - cool in pan. Sprinkle with extra walnuts if desired.
