1 medium head of cauliflower, cut into florets
1 red bell pepper, diced
1 medium yellow onion, cut into pieces 1/2" wide
2 tbps of extra virgin olive oil
1/4 tsp of salt

8oz of ziti, rigatoni, or penne
4 cupts of marinara sauce
1/4 cup chopped fresh basil, plus extra for garnish
8oz of grated mozzarella cheese
2 cups of ricotta cheese

1. Preheat over to 425 degrees. Mix veggies with oil and salt. Roast for 30-35 minutes.

2. Meanwhile, cook pasta. When done, return the pasta to the pot.

3. Add 2 cups of marina, the basil, and 1/2 cup of the mozzarella to the pot. Gently stir to combine.

6. Spread 1 cup of marinara inside of a 9x13" baker. Top with half the pasta mixture, spreading it to an even layer. Add the cauliflower on top of this layer, with 1 cup of ricotta on top, followed by 1.2 cup of mozzarella.

7. Top the mozzarella with the remaining pasta mixture. Then add the peppers and onions with the last cup of ricotta on top and then the last cup of marinara. Sprinkle the rest of the mozzarella on top.

8. Bake for 30 minutes at 425 degrees, and then move to top rank for an extra 5 minutes. Let it cool for 10 minutes before serving.
