5 Hatch green chiles, rinsed and dried
2 Tbsp oil
4 oz yellow onion, finely chopped
2 garlic cloves, peeled and grated
1 tsp flour
1 cup vegetable stock
1/4 tsp salt

Directions:
Directions:
Spread the chiles on a baking sheet and broil, about 5 inches from heat, until the skins are charred; flip them over and repeat.
Place the chiles in a bowl covered a plastic lid or wrap to allow them to steam for about 15 minutes.
Remove the skins from the chiles by wiping with a paper towel, then stem, seed, and chop.
Heat the oil in a saute pan, then cook the onion until it starts to soften.
Add the garlic and cook for 1 minute.
Sprinkle the flour over, stir, and cook for 1 minute.
Whisk in the stock, then add the chiles and salt.
Bring to a boil, then reduce heat and simmer for 15 minutes, until thickened.
Cool in a bowl before removing to an airtight container.
Refrigerate for up to 1 week.
