8 oz penne pasta
4 strips bacon, roughly chopped
1 T. butter
3 garlic cloves, minced
1 c. broccoli florets
4 T. fresh lemon juice, divided
1 lb. frozen raw shrimp, thawed, peeled & deveined
Salt and pepper to taste
⅓ c. fresh Parmesan cheese, grated

Cook pasta according to package directions until al dente; drain and set aside.

In a large saucepan over medium heat, add bacon. Cook for 8-10 minutes or until slightly crispy; remove from skillet with a slotted spoon and let drain on paper towel-lined plate.

Return saucepan with bacon drippings to the stove and place over medium heat; add butter. Once melted, add garlic and sauté for 2 minutes. Add broccoli and cook for 4 minutes or until tender. Add 3 T. lemon juice and shrimp and cook for an additional 4-5 minutes or until shrimp are pink and cooked through. Stir in pasta, bacon and salt & pepper to taste, and cook for 2 minutes.

Serve sprinkled with remaining lemon juice and Parmesan cheese.
