How long do you pressure can dry potatoes?
Place jars in pressure canner and follow canning instructions to bring canner to 10lbs pressure. Process for 40 minutes.


I soak my potatoes in cold water with a splash of vinegar for 20 minutes.....3 times for a total of 60 minutes. I fill a large pot with potatoes, cold water and a splash of vinegar to remove starch after 20 minutes, drain and repeat 2 more times.

Fill each jar with potatoes, tsp of canning salt and a tablespoon of butter.......NO WATER then process for 40 minutes ( quart jars) at 10 pounds of pressure.
and 35 minutes at 10 pounds for pints

add 3 inches of tap water to canner... with rack and no jars for the 3 inch measure.
