Olive oil

1 sweet onion - thinly sliced

1 cup dry white wine

1 lb cod

2 teaspoons fresh thyme

salt
pepper

1 1/2 cups finely chopped country bread (about 2 slices)

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1 cup shredded Gruyere cheese

Directions:

Preheat over to 400 degrees

Heat tablespooon or so of olive oil in dutch oven. Add onions and cook til softened (5-7 min)

Add wine and cook until wine is slightly reduced (2-4 min)

Place cod on the onions and sprinkle with thyme, salt and pepper. Place lid on dutch oven and bake for 12 minutes

Toss bread with 1 tablespoon oil, paprika, and garlic powder.

Spread bread over the fish and top with the cheese.

Bake for another 10 minutes
